Simonnet-Febvre has been producing its wines with traditional methods since 1840. It is the only Maison in Chablis to produce Crémants of Burgundy.
Vineyards:
All the grapes were sourced from parcels located within the Burgundy AOC area: the Pinot Noir and Aligoté were grown in the Côte d'Or, the Gamay in the South of Burgundy and the Chardonnay from the Mâconnais
Vinification:
This wine has been made according the traditional method. The second fermentation happened in bottle and the wine was aged for a minimum of 12 months on slats.
Tasting Notes:
A harmoniously balanced wine with fine bubbles, a persistent foam and a wonderful length in the mouth. It is fresh and powerful on the nose with aromas of citrus.
Drink this crémant as a chilled aperitif, as it comes or with a liqueur such as crème de cassis, and why not even drink it throughout a whole meal..
