"Louis Bouillot is not only the largest producer of Crémant de Bourgogne but also one of the oldest, having been founded in Nuits-Saint-Georges in 1877 by Jean Bouillot. Today, the house is owned by the Boisset family, but overseen by specialist Crémant de Bourgogne winemaker Frédéric Brand. Both wines are made using the 'méthode traditionnelle', the same method used for Champagne, and undergo extended lees ageing.

The Pinot Noir grapes for the 'Perle d'Aurore' are sourced entirely from vineyards in the Côte d'Or and Côte Chalonnaise, while the Gamay is from the Mâconnais.

The Rosé has a pale pink colour that is called 'oeil de perdrix' or 'partridge's eye'. The Pinot Noir and Gamay for the 'Perle Noire' come from vineyards predominantly in the northern areas of Burgundy, closer to Champagne, and from the Mâconnais."

Vineyards:

Fruit for the 'Perle Noire' is sourced from vineyards all over the Burgundy region, but predominantly from the northern areas nearest Champagne and the Maconnais.

Vinification:

The 'Perle Noire' is a Blanc de Noirs (white wine produced from red grapes) sparkling wine. It is made by the 'méthode traditionnelle', the same method as in Champagne. The grapes were lightly pressed and the two varieties of Pinot Noir and Gamay vinified separately. The individual parcels of wine were blended, then the 'liqueur de tirage' of sugar and yeast was added, before the wine was bottled ready for the second fermentation. The bottles were aged for a minimum 15 months before 'degorgement' at 12ºC. The bottles were then topped up with a 'liqueur de dosage', to give a residual sugar level of 12 grams per litre.

Tasting Notes:

Distinctive pale pink in colour with a fine, elegant mousse and red fruit aromas on the nose. On the palate the wine has excellent weight, balance and complexity, and represents superb value for money.
