Process : Appassimento is the process of natural partial dehydration of grapes to produce a greater concentration of colours, aromas and flavours in the wine. Since partially dried grapes also have a higher concentration of sugars, this system is often used to make sweet or very concentrated wines.

This wine has been produced from vines that are normally very old (25-30 years old) in the heart of Salento area South East Puglia.

Tasting Note:

The TANK No 32 Primitivo Appassimento from Cantine Minini sparkles in a wonderful dark red glass. This Italian red wine inspires with its perfect combination of elegance and power. The bouquet reveals aromas of ripe cherries, juicy plums and dried fruit. Especially figs, dates and raisins come to mind.

The palate of TANK 32 impresses with its dense and concentrated character. The pleasant and equally discreet residual sweetness gives this red wine a wonderful velvety texture. The long finish of Tank No 32 is carried by delicate notes of nougat and dark chocolate.
